# Mike Pitera

Restaurateur & Pizza Ambassador · Restaurateur & Content Creator

Mike Pitera knows what it takes to feed a full dining room — he's done it. After owning and operating his own restaurant, Mike developed the kind of instinct for dough, heat management, and timing that only comes from years of high-volume, high-stakes cooking. That restaurant background gave him an edge when he transitioned to the home pizza space, where his meticulous approach to hydration, fermentation, and oven management consistently produces competition-level results in his own backyard. Mike's content focuses on the details that separate good pizza from unforgettable pizza — stone temps, launch technique, and the small adjustments that make all the difference. His philosophy is simple: treat every bake like service. Mike partners with Festa to push the boundaries of what a portable pizza oven can achieve, bringing professional-grade technique to every home cook willing to learn.
